Place all ingredients into a bread maker and set to the dough cycle.
If making by hand, mix the yeast, olive oil, sugar and warm water together in a bowl and leave for 10 minutes in a warm place to allow the yeast to activate and the mixture become frothy.
Add the flour, chopped onion and a handful of fresh rosemary and knead to form a dough.
Roll out dough in a circle and brush with extra olive oil. Allow to rise for 15 - 30 minutes then dimple with fingers and sprinkle with rock salt (optional - chopped olives/parmesan cheese)
Bake at 200C for 10 - 15 minutes or until golden brown
