Course: Dessert
  • 1 Tbsp yeast
  • 4 cups plain flour
  • 2 tsp sugar
  • 1/2 tsp salt
  • 4 Tbsp butter
  • 2 eggs
  • 1 1/4 cups warm milk
  1. Place all ingredients in a bread maker and set to “dough” cycle, 45 minutes. Or if you don't have a bread maker, mix yeast, sugar and warm milk together - wait ten minutes allowing the mixture to froth before add the remaining ingredients. Knead, shape into a ball.

  2. Roll out on a floured surface into a large rectangle shape.

  3. Using a pastry brush, spread a generous amount of melted butter over the rectangle.

  4. Mix a cup of brown sugar and ¼ cup of cinnamon together and sprinkle evenly over the rectangle.

  5. Roll up it up into a long sausage and slice it up into 3 cm rounds. Place onto a baking tray lined with baking paper. Cover with a tea towel and leave to rise for about 30 minutes.

  6. Preheat the oven to 180°C and bake for 20 minutes.

  7. Remove from the oven and allow to cool slightly. Make a runny glaze with juice from one lemon and icing sugar. Brush over each pinwheel. Devour!
